Crispy skin, tangy sweet seasoning- this is the chicken recipe you've been craving!

Ingredients

  • approx. 1.5lbs chicken thighs (skin on)
  • 1/4 cup dijon mustard
  • 1-1.5 tbsp honey (depending on how sweet you want it)
  • 1/4 cup Italianndressng
  • 1/2 tbsp Italian season
  • 2 tsp rosemary (fresh or dried)
  • 1/4 tbsp lemon juice

Instructions

  1. Combine all wet and dry ingredients in a bowl, stir
  2. Prep your chicken thighs (trim excess fat/skin)
  3. Put your chicken thighs in a gallon sized zip lock bag
  4. Add mixed ingredients to the bag w/ chicken and make sure everything is well coated
  5. Marinate for 20min-1hr (if you have the time)
  6. Heat skillet and add cooking oil of your choice
  7. When oil is hot, place chicken skin side down on pan (do not over crowd pan)
  8. After about 3 minutes flip to underside and cook for about another 3 minutes
  9. Transfer chicken to a lined baking dish and heat on 425° F for approx. 30 minutes (some ovens take more time or less, but thighs are very hard to overcook)
  10. When internal temp reaches 165° F it is safe to eat

Notes

I will sometimes add all my extra veggies to this dish and make a one pan meal. Usually it is asparagus or potatoes, but you can add mushrooms or anything else you have handy. Season your sides and add to pan. Also I like to batch cook this chicken, that way we have extra meals for the week!

Super easy weeknight recipe, you can cook with whatever veggies you have in the fridge
