
Comforting Lentil Veggie Soup

Ingredients
- 2 cups green lentils/split peas
- 3/4 cup yellow lentils
- 1 cup chopped carrots
- 1/2 cup diced yellow onion
- 1/3 cup diced celery stalk
- 2 cups chopped butternut squash
- 1 cup chopped rutabaga
- 1 carton of veggie stock
- 1 tbsp minced garlic
- 1/2 tbsp garlic powder
- 2 tsp herbs de provence
- 2 tsp fresh thyme
- salt to taste
- pepper to taste
- about 1 tbsp lemon juice (to taste)
Instructions
- Chop all veggies (or buy them precut)
- Toss in all ingredients (except the olive oil)
- Set slow cooker on high for 3-5 hrs (some crockpots take less time if they run hot)
- When the lentils are soft and the squash is fork tender, you're all set!
- Serve with a dash of olive oil and salt on top, and a side of buttered bread 🙂

I make my life easy, and buy all the veggies cut up so I can throw 'em in before I go run errands!
